Our bee's spend the long Alaskan summers feeding on the abundant fields of fireweed. Fireweed is tall perennial herb with large clusters of rose to purple flowers, fireweed grows in dense stands on cut or burnt over timber lands for 12 to 15 years after tree removal or burn. This honey is one of the lightest and sweetest honey's, prized for its water-white color. Its taste is delicate and very sweet with very subtle, tea-like notes.
Fireweed is a member of the Onagracae family of plants. Its name refers to the fact it is a "pioneer plant" quick to appear in burned over areas. As the growth of new trees and shrubs re-grow they crowd out the fireweed plants.
