Alaskan Raw Honey 

It is a light but very sweet honey that is hard to get because of our short summers which       makes the nectar flows very short. We normally only collect 50-80 pounds of honey per hive Beekeeping in Alaska is not easy the weather really takes a toll on the bee's and the             Beekeeper's.

 Chugiak Heights - Alaska Honey
Our bee's spend the long Alaskan summers feeding on the abundent fields of fireweed. Fireweed is tall perennial herb with large clusters of rose to purple flowers, fireweed grows in dense stands on cut or burnt over timber lands for 12 to 15 years after tree removal or burn. This honey is one of the lightest and sweetest honey's, prized for its water-white color. Its taste is delicate and very sweet with very subtle, tea-like notes.

Fireweed is a member of the Onagracae family of plants. Its name refers to the fact it is a "pioneer plant" quick to appear in burned over areas. As the growth of new trees and shrubs  re-grow they crowd out the fireweed plants.

No other major honey plant grows as far north as fireweed. It is a hardy plant which regularly appears in North America from Alaska to California, particularly in the Pacific Northwest. Weather is important for fireweed's nectar secretion, humidity and temperature can make the difference weather the plant produce nectar or not. Depending on location and altitude, fireweed may bloom as early as June and as late as September.

Alaskan Comb Honey

Honey Comb is the rawest form of honey this is how the bee's made it.  

The honey bee's need to eat ten pounds or more of honey to make one pound of

bee's wax. And for this reason honey comb is hard for the beekeeper's bees to

make because of how much honey the bee's eat just to make the wax combs.

Eating raw honey comb is a rare experience because of how hard it is to find unless

you know the Beekeeper.
